INGREDIENTS:

3 cups thinly sliced okra
4 cups thick curd/yogurt
3 tbsp oil
1 tbsp mustard seeds
1 tbsp salt
1/2 tbsp red chili powder

METHOD:
  • Wash the okra and slice them thinly.
  • Heat oil in a pan and add the mustard seeds.When the seeds start to splutter,add the okra.
  • Saute it on a low flame until it becomes crispy.
  • Now add the salt and chili powder and mix well.
  • Beat the curd and add the turmeric powder and the crisp okra and mix well.
  • Serve immediately with any type of rice(click to see).

KESAR BADAM MILK

INGREDIENTS:

4 cups milk
10-15 almonds
a few saffron strands
1/4 tbsp cardamon powder
1/4 cup sugar

METHOD:

  • Boil the milk in a heavy bottomed pan.Continue heating even after the milk boils until the milk becomes a little thicker than before .
  • Chop the almonds as finely as possible.(Do not grind them).
  • Now add the sugar,cardamom powder and the saffron strands and mix well.Continue to heat it for about 5 minutes.
  • Finally add the chopped nuts and mix well.
  • Keasar badam milk is now ready.Serve it hot

WATERMELON HALWA

INGREDIENTS:

4 cups grated watermelon
2 cups sugar
1 cup milk
1/4 cup ghee
1/6 cup chopped cashew nut, pistachios and almonds
1 tbsp cardamon powder

METHOD:
  • Remove the seeds if any in the watermelon and then grate it.
  • If there is too much of juice from the melon after grating,then do not use the water as it will increase the time required for cooking.(Use about one cup of the juice for the watermelon halwa).The remaining can be served as watermelon juice.
  • Heat half the ghee in a pan and add the grated watermelon.
  • Stir continuously on a low flame until it is cooked and it is soft.
  • Add the milk and sugar and continue to cook until it becomes tender and all the excess liquid is evaporated.
  • Add the remaining ghee, chopped nuts and the cardamon powder and mix well.
  • The watermelon halwa is now ready to serve
  • Serve it hot.

GREEN GRAPE JUICE

INGREDIENTS:

6 cups seedless green grapes
2 tbsp fresh lemon juice
6-8 tbsp sugar
a pinch salt
1/4 cup ice cubes
1/4 cup cold water

METHOD:

  • Blend the grapes with lemon juice and water and strain the juice.
  • Add sugar,salt and ice cubes and blend again.
  • Serve the green grape juice immediately.

INGREDIENTS:

Paneer made from 1 liter milk
1 potato
1 1/2 cups all plain flour
1/2 cup semolina flour
1 tbsp ghee
1 green chili,chopped very finely
1/4 tbsp red chili powder
a pinch of baking powder
2-3 tbsp of chopped almonds,pistachios and cashews
salt as required
1 cup cold water
oil for frying

METHOD:
  • Boil the potato,smash it and keep it aside.
  • In a bowl, mix the semolina flour,plain flour,baking powder and 1/4 tsp salt and make into a stiff dough by adding water little by little.When the dough is stiff, knead well with ghee until it becomes soft and elastic.
  • Leave it aside for 15-20 minutes.
  • For the filling,crumble the paneer. Heat 2 tbsp of oil,add the smashed potato and the paneer and mix well.
  • Add a pinch of salt,red chili powder,nuts and the chopped green chili and mix well.
  • Take a small lemon sized portion of the dough and roll it using a rolling pin into a thin circle.
  • Cut the circle into half.
  • Now join the straight edges to form of a cone.Press well to seal the edges and fill the cone with the paneer filling.Seal the other side.
  • Do the same thing with the rest of the dough.
  • Fry the paneer samosas in hot oil and serve it immediately.
  • You can also serve it with sweet and green chutneys from the pani puri recipe without diluting them.

FRIED VEGETABLE NOODLES

INGREDIENTS:

500 gm rice noodles
1 cup finely shredded cabbage
1 onion ,finely sliced
1 carrot, grated
1 green pepper, sliced lengthwise
10-12 french beans ,cut into 1 inch long pieces
a pinch of red chili powder
2-3 tbsp dark soy sauce
2 tbsp green chili sauce
1 liter water
salt as required
1/4 cup oil

METHOD:
  • Blanch the french beans into hot water for 5 minutes.
  • Heat 3 tbsp of oil and saute onions till golden brown and then add the green pepper.
  • After a minute, add the carrot and cabbage and continue cooking until all the vegetables are soft and well cooked.Now,add the beans and saute for a minute.
  • Add the red chili powder,green chili sauce,salt and the soy sauce and mix well.
  • Heat water and boil the noodles and strain the excess water.
  • Heat the remaining oil and carefully fry the noodles and remove it before it becomes crispy.
  • Now add the noodles to the cooked vegetables mix it well and heat it.
  • Your fried noodles is ready!!Serve it hot with tomato ketchup.

VEGGIE BURGER

INGREDIENTS:
5 burger buns
3 potatoes
1/4 cup chopped onion
1/8 cup chopped carrot
1/4 cup frozen green peas
1/4 tbsp grated ginger
2-3 cloves garlic finely chopped
a pinch of pepper
1/2 tbsp red chili powder
oil for deep frying
lettuce leaves
mustard sauce
5 processed cheese slices
salt as required
1 onion cut into thin slices
mayonnaise sauce
1/2 cup corn flour
1/2 cup water
1 cup bread crumbs
salt as required

METHOD:

  • Pressure cook the potatoes and carrot seperately.Peel the potatoes.
  • Heat 3-4 tbsp of oil and add the finely chopped onions to it and saute.When it becomes golden brown,add the ginger,garlic and green pead saute.
  • Add the potatoes,carrot,red chili powder,salt,pepper and mix well.
  • Smash the entire mixture until it becomes a smooth paste.
  • Divide it into 5 equal portions portions and roll them into balls.
  • Mix water with the corn flour and a pinch of salt.
  • Flatten each ball into the shape of a patty and dip it in the corn flour mixture and then coat it with a layer of bread crumbs.
  • Fry the patties in oil.
  • Cut each burger bun into half.Place a few lettuce leaves and then the patty and the thinly sliced onion.
  • Placed the processed cheese on top of it and then spread a little mustard sauce on it.
  • On the other half of th bun, spread mayonnaise sauce and place it on top.
  • Repeat the same procedure for all the other burger buns.
  • Heat the veggie burger and serve it with tomato ketchup.

PALAK PANEER

INGREDIENTS:

150 gramsPaneer
300 grams spinach leaves(palak)
2 tbsp coriander powder
4 tbsp butter
2 tbsp garam masala powder
1/2 tbsp turmeric powder
2 green chilies
1 tbsp red chili powder
2 cloves garlic
1 large onion
1/2 inch ginger piece
oil for frying the paneer
salt as required

METHOD:

  • Clean the spinach leaves and chop them finely.
  • Cut the paneer into 1 inch cubes and fry them in oil.
  • Heat some water and cook the spinach leaves in it.
  • Chop the onion and heat 2 tbsp of butter and saute it until golden brown.
  • Blend the spinach,green chilies,onion,ginger and garlic into a smooth paste.
  • Heat the remaining butter in a pan and add the spinach mixture to this.
  • Allow the mixture to boil and add the red chili powder,coriander powder,garam masala powder,turmeric powder and salt and mix well.
  • When the mixture boils, add the fried paneer and continue heating it on a low flame for 2-3 minutes.
  • Palak Paneer is ready!! serve it hot with rotis, pulkas.

MASALA CHAI

INGREDIENTS:

1 cups milk
1/2 cup water
2 tbsp tea leaves
1 tbsp dry ginger powder
1 tbsp ground cinnamon
1/4 tbsp black peppercorn
4-5 cloves
2 tbsp cardamon seeds
sugar as required

METHOD:
  • Powder the dry ginger powder, ground cinnamon,black peppercorn and cardamon seeds.
  • Boil water and add the tea leaves and 1 tablespoon of the masala powder and heat on a low flame until it becomes dark brown in color.
  • Heat the milk and add sugar.
  • Strain it and add it to the milk and mix well.
  • Masala chai is read!! serve it hot.

INGREDIENTS:

2 cups cold milk
2 scoops vanilla ice cream
1 scoop chocolate ice cream(optional)
few drops of vanilla extract
2 tbsp cocoa powder
3 tbsp sugar

  • Combine all the ingredients and blend well.
  • Pour the milkshake into a tall glass and add a scoop of chocolate ice cream just before serving.
  • Serve the chocolate milkshake immediately.

INGREDIENTS:

PIZZA DOUGH

FOR THE FILLING

1/2 cup grated mozzarella cheese
1 green pepper finely chopped
5-6 tbsp olive oil
1 onion finely chopped
2 olives
tomato sauce
salt as required
oregano for seasoning

METHOD:
  • Heat the oil and add the onions and saute till golden brown.
  • Then add the green pepper,tomato sauce, olives,salt and cook well until excess moisture is removed.
  • Roll out the dough into a 1/2 inch thick circle and spread the prepared filling on one half side of it.
  • Sprinkle the cheese onto it and season it with oregano.
  • Fold the other half of the dough over this and seal the sides properly.
  • Bake this in an oven preheated to 400 degrees until it becomes golden brown.
Your calzone is ready to serve. You can also use other ingredients for filling your calzone

INGREDIENTS:

FOR THE DOUGH
2 cups plain flour
1/4 cup flour for dusting
2 tbsp dry yeast
1 cup warm water
4 tbsp olive oil
1 tbsp sugar
1 tbsp salt

TOPPINGS
Any topping of your choice(I used olives,finely chopped onion,finely chopped green pepper and little corn)
Cheddar cheese(grated)
1/4 cup Tomato sauce
mozzarella cheese(grated)

METHOD:
  • Add sugar to the warm water and then soak the yeast in it until it starts bubbling up.
  • To the flour,add salt,oil and the yeast mixture and mix well.
  • Add water little by little and mix until you get a stiff dough.
  • Knead the dough for 5 minutes until it becomes soft.
  • Cover the dough with a damp cloth and leave it for about an hour in a warm place.
  • Knead the dough again until it becomes elastic.
  • Divide the dough into two equal portions and roll them into 1/2 inch thick circles.
  • On each of the bases, spread out tomato sauce,add the topping of your choice the cheese.
  • Bake them in a pre heated oven (400 degrees)until it forms a golden brown crust.
  • Your pizza is ready!serve it hot

STRAWBERRY JAM

INGREDIENTS:

4 cups ripe strawberries
2 cups sugar

METHOD:
  • Crush all the strawberries into a smooth paste.
  • In a heavy bottomed pan,mix the strawberry paste and sugar and bring it to boil.
  • Stir continuously so that it does not stick to the sides of the pan.
  • Reduce the flame and continue stirring until you get the required consistency.
  • Cool the jam,transfer it into jars and refrigerate.

CHANA MASALA

INGREDIENTS:

2 cups chick peas(kabuli chana)
4 large ripe tomatoes
2 onions finely chopped
1 " ginger piece
2 cloves garlic
2 tbsp red powder
2 tbsp garam masala powder
1 tbsp coriander powder
1/2 tbsp turmeric powder
salt as required
4 tbsp butter
1 tbsp chopped coriander

METHOD:
  • Soak the chick peas for 5-6 hours.Cook the chick peas and keep it aside.
  • Grind the tomatoes,garlic and ginger into smooth paste.
  • Heat the butter and add the turmeric powder,coriander powder,garam masala,chili powder and after a few seconds,add the onions and saute till golden brown.Add the tomato paste to this and allow it to cook well.
  • Once cooked,add the chick peas and salt and cook for 2-3 more minutes.
  • Garnish the Chana Masala with chopped coriander and serve it hot!

TOMATO PICKLE

INGREDIENTS:

1/2 kg ripe tomatoes
1 cup oil (vegetable /sunflower)
5 green chilies
2 tbsp red chili powder
1/2 tbsp mustard seeds
pinch of fenugreek powder
a pinch of asafoetida powder
salt as required

METHOD:

  • Chop all the tomatoes into long pieces.
  • Heat 1/2 cup of oil and add the tomatoes.Cook them until they are soft and tender.Once they are well cooked,keep them aside.
  • Heat the remaining oil and add the mustard seeds.When they begin to splutter,add the green chilies,fenugreek powder,asafoetida powder and red chili powder and add the tomatoes to this, mix well and continue cooking for 2-3 minutes.
  • Finally add salt and mix well.
  • Your tomato pickle is ready to serve.The tomato pickle can be stored in a refrigerator and used for 3-5 days.
