BOTTLE GOURD HALWA

INGREDIENTS:

1 large bottlegourd
1 1/4 cups sugar
1 cup milk
1/4 cup ghee
1/6 cup chopped cashew nut and almonds
1 tbsp cardamon powder

METHOD:

  • Peel the gourd and remove the seeds.Now grate it finely.
  • Heat half the ghee in a heavy bottomed pan and add the grated bottle gourd.
  • Stir continuously on a low flame until it is cooked(it becomes soft) and the raw smell is gone.
  • Add the milk and sugar and continue to cook until it becomes tender and all the excess liquid is evaporated.
  • Add the remaining ghee, chopped nuts and the cardamon powder and mix well.
  • The bottlegourd halwa is now ready to serve.

BRINJAL RAITA

INGREDIENTS:

4 brinjals
1/2 tbsp red chili powder
1/4 tbsp turmeric powder
2 tbsp finely chopped coriander
1/2 tbsp mustard seeds
4 tbsp oil
3 cups curd
salt as required

METHOD:

  • Cut the brinjal into long thin slices.
  • Heat the oil in a pan and add the mustard seeds.Once they start to splutter,add the brinjal and stir fry until it becomes crispy.
  • Add the chili powder,and turmeric power to this and mix well.
  • Beat the curd and add the prepared brinal to it.Add the chopped coriander and salt and mix well.
  • Brinjal raita is now ready. Serve it with any type of rice(click to see)
