INGREDIENTS:

4 brinjals
1/2 tbsp red chili powder
1/4 tbsp turmeric powder
2 tbsp finely chopped coriander
1/2 tbsp mustard seeds
4 tbsp oil
3 cups curd
salt as required

METHOD:

  • Cut the brinjal into long thin slices.
  • Heat the oil in a pan and add the mustard seeds.Once they start to splutter,add the brinjal and stir fry until it becomes crispy.
  • Add the chili powder,and turmeric power to this and mix well.
  • Beat the curd and add the prepared brinal to it.Add the chopped coriander and salt and mix well.
  • Brinjal raita is now ready. Serve it with any type of rice(click to see)
